Introducing Chef Dylan-Foss

Chef Dylan W. Foss believes that cooking for someone is an important responsibility, “someone trusts you to not only delivery food to the table but nutrition to their body as well”. He buys locally not only because it tastes better but because of what it brings to the community, always focusing creating a sustainable and ethical food system for the generations to come.

He has developed a passion for cooking seasonally with local ingredients. While in Lillooet he has worked closely with Farmers from the area to develop his menus. This process has contributed to a growing and refined agricultural community. Chef Foss is the vice president of the Lillooet Agricultural and Food society, where he can dive deeper into his passions.

Dylan cumulates over 15 years culinary experience. Since the spring of 2015, he has occupied the Executive Chef position at the Fort Berens Estate Winery in Lillooet B.C. Between 2010 and 2014 Chef Foss had worked to complete his apprenticeship under Executive Chef Melissa Craig of the Bear Foot Bistro in Whistler BC. In the years prior, The Long Beach Lodge in Tofino and Nu Restaurant in Vancouver had served greatly to his developing skill sets. Dylan has also worked a private chef to a number of individuals, catering to their special needs and requests.
